Dinner served in under 20 minutes. I have used turkey meatballs. Any type of meatballs work.

***MEATBALLS ARE A CHOKING HAZARD. PLEASE CUT THE MEATBALLS INTO HALF BEFORE COOKING***
Recipe: (note: 1 cup=8 oz)

15-20 meatballs cut in half
1/2 big onion sliced
*2 green chilies (for heat)- optional
1/2 teaspoon cumin seeds (use fennel seeds as substitute if needed)
1 or 2 pieces of cinnamon bark
Few Curry Leaves
oil for sautéing
1 can thick coconut milk (about 13 oz)
1 1/2 teaspoons coriander powder
1/2 teaspoon curry powder
1 tablespoon paprika (for color)
1/4 teaspoon red chili flakes (or per preference)
1 teaspoon cumin powder
1/4 teaspoon tamarind concentrate
1 teaspoon brown sugar
Salt to taste
3/4 cup water (for thin coconut milk)- optional
1/2 large tomato (optional)

Fry onions, curry leaves & green chilies for 2-3 minutes. Add the cumin seeds, cinnamon bark & fry for a minute. Reduce heat to medium, add the cut meatballs and fry for about 10 minutes until brown. Toss around occasionally to help meatballs brown evenly.

Add tomatoes if using and all the remaining spices. Mix well. Add thin coconut milk (mix about 2 oz of canned milk and 3/4 cup water to make thin coconut milk). Cook covered on low or medium-low for about 8-10 minutes or until the gravy has almost completely reduced.
Add the remaining thick coconut milk. Stir well. Add the tamarind concentrate (Skip if tomatoes have already been used and the sugar. Stir well.
Turn off heat and keep covered to rest in its own heat for a few minutes.
Enjoy with any bread or flatbread, rice, pasta, string hoppers, etc

I made this recipe tonight for my dinner as a side for chapatis and all I can say is I'm sad I didn't make enough chapatis because the curry was delicious. The only shortcut I took was substituting a tablespoon of Garlic Tomato pasta sauce in place of tamarind/tomato. And as a person who rarely uses cumin, I was pleasantly surprised that just a few simple ingredients helped me whip up a delectable dinner 🙌👏
