This Creamy Chicken Casserole with mushrooms (aka “Chicken Gloria”), will win you over. This chicken bake is the PERFECT party dish and is a reader favorite. It is a treasure of a recipe.

Ingredients for Chicken and Mushroom Casserole:
►4 -5 large chicken breasts, trimmed and cut into 1 -inch thick strips
►Salt and Pepper to taste
►1 cup all-purpose flour to coat the chicken
►6 Tbsp olive oil, divided
►1 pound fresh mushrooms, thickly sliced
►1 medium onion, finely diced
►3 garlic cloves, minced

Ingredients for the Chicken Sauce:
►3 Tbsp unsalted butter
►3 Tbsp all-purpose flour for the sauce
►1½ cups chicken broth
►1 Tbsp lemon juice
►1 cup half and half (or ½ cup milk + ½ cup heavy cream)

You know what would kick up the flavor. Add some fresh tarragon. This is just like a recipe my son made for me years ago. Only difference is tarragon and whole mushrooms. It was incredible!!!

Sounds like a great recipe. The one thing I would change is to make the best of the flavor in the skillet created by browning the chicken breasts there. After also cooking the mushrooms/onions in the skillet, and transferring both chicken and vegetables to the casserole, I would deglaze the pan with the broth. Then for thickener, I would fold the flour into the butter until it creates a paste, and whisk that into the broth before adding the half and half. That way, again, you are not losing any of that great flavor you have gained by browning your chicken breasts.
