This video is part of the distance learning videos for my Chefs II class. This is one of my favorite recipes. The flavors work well together and create a nice plate.

Looks great, but it must be said that you didn't get to be your size by dining on tiny servings like that one, where the potato is smeared to look like there's more of it than there actually is and a brussel sprout (deconstructed) is a 'portion'. Plates are the size they are for a reason and that reason is that they, like stomachs, are there to be filled. 🙂
