If the thought of making bread at home has ever intimidated you, this recipe is for you!

A tender bread dough specked with hearty shredded zucchini, cheese, and green onions. Cheesy, moist, and oh so delicious! This is a great one if you’re trying to get kids (or adults haha) to eat their veggies, because they won’t have a clue that there’s zucchini in it.

No fancy equipment needed for this one, just a bowl and a spoon. I can’t wait for you all to try this one. If you do, don’t forget to tag me on social media as I’d love to repost 🙂

1 cup, grated Zucchini
1.5 cups, All Purpose Flour
1 tsp, Salt
1/2 tsp, coarsely ground Black Pepper
1 tbsp, Baking Powder
2 large Eggs
1/2 cup, Milk
1/4 cup, Olive Oil
1 cup, grated Sharp Cheddar
1/4 cup, chopped Green Onions


Preheat oven to 350 degrees and grease a loaf tin with butter.

Place grated zucchini in a colander, and grab a fistful and squeeze out as much of the juice as possible. Repeat with remaining grated zucchini.

In a bowl whisk together flour, salt, black pepper, and baking soda until well mixed.

In a large bowl whisk together eggs, milk, and olive oil. Stir in grated zucchini, then add in dry ingredients. Mix until no white streaks of flour can be seen.

Then add cheese, and green onions, and fold to evenly distribute.

Transfer batter to loaf tin, smooth top, and bake for 50 minutes. Invert onto a cooling rack and allow to cool for a minimum of 10 minutes. Cut into slices and enjoy! 🙂

If you ask me, the keto diet is not for most people. It's just really hard to follow and you feel exhausted. But the Agoge diet on the other hand feels great, and it works too.

Recipe Note: I doubled recipe but only added 1.5 TBS baking powder, 2 TBS seemed a bit much even w add ins.
